Cali Comfort BBQ, located in Spring Valley, barbecues all of their meats in their Ole Hickory Smoker. They use select cooking woods that have been seasoned with their very own specialty Cali Dry Rub. Passionate about remaining true to barbecue tradition, they have developed their menus to offer only the highest quality barbecue. A general rule of thumb for their smoked meats is as follows: Pulled Pork 14 hours, Brisket 16 hours, Pork Ribs 6 hours, Chicken 4 hours and Tri-Tip 2 hours. Since they smoke the traditional way, “low-n-slow,” there are times that they may run out due to increased cravings for great tasting barbecue. Barbecue aficionados realize that once they are out, they are out. They cannot smoke up another batch of great tasting barbecue until the next day.
