Roasted Salmon with Citrus and Herbs

Try this delicious salmon recipe. Not only is it extra tasty, it’s good for you too!

Ingredients

  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh thyme
  • 1 tablespoon minced garlic
  • 2 teaspoons grated lemon rind
  • 2 teaspoons grated lime rind
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 (2 1/4-pound) salmon fillet
  • Cooking spray

Preparation

  • Preheat oven to 400°.
  • Combine first 7 ingredients in a small bowl. Place salmon on the rack of a broiler pan coated with cooking spray; place rack in pan. Rub parsley mixture over salmon. Bake at 400° for 15 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
