Buca di Beppo’s Apple Gorgonzola Salad
Make this delicious Buca di Beppo salad right in your own kitchen!
Serving Size- 3
INGREDIENTS:
Granny Smith Apple 1 each
Lettuce mix, prepared 1- 10 oz bag
Italian Dressing, prepared 3 Tablespoons
Gorgonzola Cheese, crumbled ¼ cup
Spiced Walnuts, prepared 1/3 cup
Gorgonzola Cheese, crumbled ¼ cup
Dried Cranberries, prepared ¼ cup
Spiced Walnuts, prepared 1/3 cup
PREPARATION:
1. Cut the apple down all four sides of the core. (See Picture)
2. Cut the two larger apple pieces into 3 slices each and the two smaller pieces into 2 slices each. (Total of 10 slices)
3. Cut the useable fruit from around the core into ½” pieces.
4. Pace lettuce mix and dressing into a metal mixing bowl. Using salad tongs mix until lettuce is coated.
5. Add ½” Apple Pieces, first amount of gorgonzola and spiced walnuts to the salad mix and toss.
6. Transfer salad into chilled salad bowl.
7. Top salad with second amount of gorgonzola and dried cranberries.
8. Garnish the salad with the apple slices and second amount of Spiced Walnuts.
